Start With Your Real Wash-Up Volume

Do not size a commercial dishwasher from the total number of seats alone. Measure what happens at peak service. Count the racks, plates, glasses, cutlery, trays, and cookware returning to the wash area during the busiest 30 to 60 minutes. A restaurant with 80 covers and fast table turns may need more capacity than a larger operation with staggered service.
